Stir Fried Mussels with Chili and Garlic. 1 pound mussels, clean and remove the beards. 3 clove garlic, minced. 1 thumb ginger, julliened. 5 chili padi, chopped. 2 tbsp light soy sauce. 1 tsp dark soy sauce. 2 tbsp shaoxing rice wine. Sugar and white pepper as your preference. 1 Stir fried garlic, ginger and chili untill the aroma comes out. 2 Add the mussels and sauce. 3 Cover the pan and cook for about 1 minute.
